Is it nearly summer yet? I think I’m wishing away the year too quickly, although can you believe we’re already half way through March? It’s kind of scary… It feels weird to be writing this seemingly summery post when there’s still snow laying on the ground outside, but the supermarkets have just started to have the most beautiful fresh berries available, and I couldn’t resist!

This cake though… it’s so simple! Each layer is just 2 ingredients, fruit and yoghurt. The fruit completely flavours the cake making it naturally sweet and brightly coloured!

Fresh Fruit Frozen Yoghurt Layer Cake

Makes 1 Cake

This healthy fresh fruit frozen yoghurt layer cake is a stunning show stopper! It's fresh and healthy with absolutely no artificial sugar. Click through to get the recipe!

Ingredients

260g Strawberries,
260g Raspberries,
260g Blueberries,
3 Kiwi Fruit,
1/2 a Large Mango,
20 Tablespoons Natural Yoghurt.

Steps:
1. Line a 7 inch cake tin with cling film.

2. Blend each kind of fruit with 4 tablespoons of yoghurt until completely smooth. Pour the first layer into the cake tin then allow to set in the freezer for at least 30 minutes before adding the next layer. Repeat until all layers are frozen.

3. Allow the cake to sit at room temperature for about 10-15 minutes for attempting to cut it. Heating the knife slightly before cutting will also make it easier.

Note: This cake is more like a large frozen popsicle than ice cream, it’s not soft to cut, but it’s extra refreshing!
